From September 10, 2025 in Korea
at Edition Hippopotamus from February 2026
You can't just read and eat books,
but also bake!
So here you will find the ingenious birthday cake recipe from master confectioner Monsieur Eclair (Eclair-ssi is his name in Korean)
also known as: Valerie Meinitzer, from Vienna. She is a master-class cake baker, even though she does something completely different in her job: she is one of my German editors 😆 So if you want to bake this delicious raspberry and pistachio cream cake, make sure you find someone with baking experience! This is a real master birthday cake! But it's worth the effort!
So have fun baking and reading!
This makes eating books even more fun!
Ingredients (dough):
6 eggs
250 g yogurt
1 teaspoon baking powder
220 g powdered sugar
150 g ground pistachios
150 g flour
a pinch of salt
Preparation (dough):
Step 1: Separate the eggs first and then beat the egg whites until stiff. You can put the egg whites to one side.
Step 2: Now mix the egg yolk until it is creamy. Then carefully add the yogurt, baking powder, flour, powdered sugar and ground pistachios.
Step 3: In the meantime, you can preheat the oven to 180 degrees (hot air).
Step 4: Now carefully fold the egg whites into the batter.
Step 5: Now you can line a springform pan with baking paper.
Step 6: Pour the batter into the springform pan and bake in the oven for approx. 40-50 minutes. It is best to test the cake with a skewer after the specified baking time (insert a skewer into the warm cake and check to see if any batter sticks to the skewer). If some batter is still sticking, leave the cake in the oven a little longer).
7th step: Once the cake is ready, leave it to cool completely before removing it from the tin.
Step 8: Now cut the dough lengthwise into two equal pieces.
Ingredients (cream):
250 g curd cheese
Lemon juice of one lemon
150 g sugar
350 g mascarpone
250 g yogurt
250 g raspberries
Preparation (cream):
Step 1: Mix the mascarpone, curd cheese and yogurt with lemon juice and sugar until creamy.
Step 2: Wash the raspberries and spread them over the cake base. You can then spread the cream on top.
Step 3: Place the second half of the cake on top of the cream.
Step 4: Finally, place the cake in the fridge for a few hours.
Ingredients (decoration):
250 g cream
Raspberries
Pistachio slivers
Preparation (decoration):
Step 1: Whip the cream until stiff.
Step 2: Now you can spread the cake with cream and decorate with raspberries and pistachio slivers to your heart's content.
We did it!
Of course, you can also decorate your cake in a completely different way! As always, there are no limits to your imagination!
And if it doesn't turn out at all, the cream and the cake base taste just as good!

Making-of
in the Hamburg Central Library
In this video you can see a complete run-through of the fox dance as we filmed it in the Hamburg Central Library. We played the music through a speaker and you can hear other children in the background who were watching us filming, as well as the instructions from Tara, the dance teacher. You can't see her in the picture.
So that's what it could look like for you afterwards.
