So here you will find the ingenious birthday cake recipe from master confectioner Monsieur Eclair (Eclair-ssi is his name in Korean)
\nalso known as: Valerie Meinitzer, from Vienna. She is a master-class cake baker, even though she does something completely different in her job: she is one of my German editors \ud83d\ude06 So if you want to bake this delicious raspberry and pistachio cream cake, make sure you find someone with baking experience! This is a real master birthday cake! But it's worth the effort!<\/p>\n

6 eggs<\/h5>\n
250 g yogurt<\/h5>\n
1 teaspoon baking powder<\/h5>\n
220 g powdered sugar<\/h5>\n
150 g ground pistachios<\/h5>\n
150 g flour<\/h5>\n
a pinch of salt<\/h5>\n

Preparation (dough):\u00a0<\/span><\/b><\/span><\/h3>\n

Step 1:<\/i> Separate the eggs first and then beat the egg whites until stiff. You can put the egg whites to one side.<\/h5>\n
Step 2:<\/i> Now mix the egg yolk until it is creamy. Then carefully add the yogurt, baking powder, flour, powdered sugar and ground pistachios.<\/h5>\n
Step 3:<\/i> In the meantime, you can preheat the oven to 180 degrees (hot air).<\/h5>\n
Step 4:<\/i> Now carefully fold the egg whites into the batter.<\/h5>\n
Step 5:<\/i> Now you can line a springform pan with baking paper.<\/h5>\n
Step 6:<\/i> Pour the batter into the springform pan and bake in the oven for approx. 40-50 minutes. It is best to test the cake with a skewer after the specified baking time (insert a skewer into the warm cake and check to see if any batter sticks to the skewer). If some batter is still sticking, leave the cake in the oven a little longer).<\/h5>\n
7th step:<\/i> Once the cake is ready, leave it to cool completely before removing it from the tin.<\/h5>\n
Step 8:<\/i>\u00a0 <\/span>Now cut the dough lengthwise into two equal pieces.\u00a0<\/span><\/h5>\n<\/div><\/section>\n

250 g curd cheese<\/h5>\n
Lemon juice of one lemon<\/h5>\n
150 g sugar<\/h5>\n

Step 1:<\/i> Mix the mascarpone, curd cheese and yogurt with lemon juice and sugar until creamy.<\/h5>\n
Step 2:<\/i> Wash the raspberries and spread them over the cake base. You can then spread the cream on top.\u00a0<\/span><\/h5>\n
Step 3:<\/i> Place the second half of the cake on top of the cream.<\/h5>\n
Step 4:<\/i> Finally, place the cake in the fridge for a few hours.<\/h5>\n<\/div><\/section>\n
